Brown Sugar Salmon Dinner


Everyone has a "go-to" recipe for dinner. Those recipes that require very few ingredients to purchase and one that everyone loves. This Brown Sugar Salmon with broccoli salad and potatoes is my "go-to" salmon dinner. It's super easy but also a good crowd pleaser. 



Broccoli Salad*

5 cups chopped broccoli florets

3oz shredded cheddar cheese

1/3 cup cashews (I used pecans due too that being the only nuts I had on hand)

1/4 cup finely diced red onions

1/4 cup dried cranberries



The Dressing:

1/3 cup mayo

1/4 cup milk

2 tablespoons sugar

1 tablespoon apple cider vinegar




This broccoli salad is in my opinion the only way broccoli should be eaten. 

Okay so maybe steam some up and throw some melted cheddar cheese on top and I would be just as happy. Regardless, this salad is so good. 

The only detail about this salad that is super important to remember is to make it ahead of time, I mean if you can make it a day ahead DO IT. The longer it sits, the more delicious it gets. 

Just trust me on this one. 


This salmon is melt in your mouth deliciousness. 

1/2 cup dark brown sugar

1 Tablespoon Chile Powder

1 teaspoon kosher salt

1/2 teaspoon ground black pepper

4 8oz salmon fillets

Coat the filets in olive oil and place the sugar/spice mixture on top.
Bake at 400 F for 15 minutes depending on thickness of filets. 


Potatoes 

For the potatoes all I did was toss them in olive oil and add a sprinkle of Natures Seasoning. Throw them in the oven at 400 F for 20 minutes or so until they are soft.
