GF White Chicken Chili


My Bridal shower was a couple of weekends ago and we played the newlywed game. One of the questions that I had to guess how Adam answered was, "what is your favorite meal Jennifer makes?" well I assumed he went with "anything meat and potatoes" however he threw me for a loop and said "white chicken chili" This is the recipe that my husband has claimed as "the best meal I cook" So with that being said, here is the recipe for this delicious, melt in your mouth White Chicken Chili. 

In full disclosure this is definitely not a low fat/healthy recipe. but it is absolutely delicious none the less. Also I don't claim this as my own I first came across the recipe on this site and adapted it for Adam and I. 


Do It:
Makes enough for a small crowd or at least two meals for two people.

1 lb boneless skinless chicken breast
1/2 yellow onion diced
1 can chicken broth 
1 can gluten free cream of chicken soup 
1 can great northern beans drained and rinsed 
1 can green chilies
1 can whole kernel corn drained
1 tsp salt
1 tsp garlic powder
1/2 tsp black pepper
1 tsp cumin
1 tsp oregano
1/2 tsp chili powder
1/8 tsp cayenne pepper
4 oz cream cheese
1/4 cup half/half

Toppings:
cheese of your choice
sour cream
fritos

 Throw everything in the crockpot EXCEPT the cream cheese and half/half. 

Stir and cook on low for 8hrs or high for 4. 

Remove chicken too shred. (I place mine in a food processor)

Place shredded chicken back into the crockpot and cook another 30 minutes or so. 

Add in the half/half cream cheese and place on high for 15 minutes before you want to eat. Unless you want chunky cream cheese in your chili I recommend placing the cream cheese and half/half in a bowl in the microwave for 30 seconds or so until warm. Mix those up until the lumps have cleared and then pour the mixture back into the chili and stir until combined. 

Place into serving bowls, top as you wish and enjoy with a side of corn bread. I use this mix in a pinch.
