Black Beans and Rice


I grew up on black beans and rice, but not this kind. My dad would make black beans and rice and it would take all day, or so it seemed as a child. It was a long process and it was so delicious. Well I am sure I could muster up the time and effort to make his version but I came up with my own version a while back that takes 15 minutes and is a great go to for a weeknight dinner when your out of ideas. 







Do it:

1 can black beans
1 cup of cooked rice
1 sweet potato chopped
1/4 cup frozen corn
1/4 cup red bell pepper chopped
1/4 cup onion chopped
1/2 tsp - 1tsp (to taste) cumin
1/4 tsp garlic powder
salt/pepper to taste


topping: Avocado, Cheese, Sour Cream, Tomatoes. basically whatever you have on hand that your heart desires. 

Start the rice cooking and chop up your sweet potato. Go ahead and throw the sweet potato in the pan with some olive oil to soften it. While that softens chop the rest of your veggies. 

Throw the rest of the veggies in with the pan with the sweet potato and saute until everything is cooked through. Add your spices and mix well until fragrant. 

Everything should be done by the time the rice is done. Add rice to a bowl and top with the veggie mix and whatever toppings you desire.
