Quesadillas



Vegetarian Quesadillas 

1 can of kidney beans
1 red pepper 
1 onion
1/4 cup of corn
1 cup montery jack or however much you end up needing
1 small sweet potato
1 tsp chili powder
1/2 tsp cumin
1/8 tsp cayenne 
salt to taste



chop veggies


saute veggies until soft, add seasoning


take the tortillas and place them in a hot pan, spread cheese onto the tortilla

once the cheese is melted add your cooked veggie mix to half of the open faced tortilla

add more cheese to the top of your veggies and flip the side without veggies onto the veggie side forming the quesadilla. 

top with whatever your heart desires. We usually use sour cream, avocado, salsa, tomatoes.
